Sierra Juviles Ham, the well known as Jamon de Trevélez
Jamones de Juviles is a member of the Trevélez Control Board of ham and its hams are elaborated on facilities covered by the I.G.P. Trevélez. All Trevélez hams have to be covered by the regulatory board and have a seal listed with a “T”, blue, red or black and controlled by the board.
“Trevelez hams” are produced in the town of Juviles, in the center of the Alpujarra, over 1,250 m. altitude in the natural park of Sierra Nevada. Handmade and natural, from a high quality white pig, salted but nitrifying or preservatives, only sea salt, complying with the rules of the regulatory board.
Dry-cure time is between 17 months and 23 months of natural healing.
