Pieces cured in their own drying rooms, following the Blázquez criteria, which have been learned from generation to generation. These pieces have a curing period of more than 24 months.
Each production process is exhaustively evaluated afterwards, to achieve an intense flavor and a unique texture within the reach of the best and most demanding palates.
