Iberico pork is derived from black Iberian pigs in the central and southern parts of Spain.
Iberian pigs feed on acorn and contain higher fat content than other pigs. A large amount of the fat is unsaturated oleic fat which research has shown that it can reduce cholesterol level. The colour of Iberico pork is bright red as compared to regular pork which is more pinkish white. Iberico pork is also juicier and more flavourful.

They grow underground in the roots of oak, hazelnut, chestnut and other trees. Truffles farmers often use dogs to find the truffles before they are dug out.
